Ingredients

1 lb Oishii Shrimp

2 ½ tablespoons Tasman Sea Salt
1 ½ tablespoons black pepper
5 tablespoons blended oil (75% canola / 25% olive oil)
1 oz (about 10-12) dried chile árbol peppers
3-4 cloves garlic, finely minced
2 teaspoons kosher salt
⅔ cup blended oil (same as above)
¾ cup fresh lime juice (about 6-8 limes)
⅓ cup fish sauce
3 ½ tablespoons sesame oil

Directions
Prep the Shrimp
Place the shrimp in a large mixing bowl. Drizzle with the blended oil, tossing to coat evenly.
Sprinkle with Tasman Sea Salt and coarsely ground black pepper. Toss again to ensure all shrimp are well seasoned.
Let shrimp sit at room temperature for 8-10 minutes while you prepare your grill or grill pan.
Make the Chile Árbol Lime Sauce
Preheat your oven to 350°F (175°C), or heat a dry skillet over medium heat. Place chile árbol peppers on a baking sheet and toast in the oven for 7 minutes, or toast in the skillet, stirring occasionally, until dark and fragrant. Let chiles cool, then chop finely (remove seeds if you prefer less heat).
In a heatproof bowl, combine chopped chiles, minced garlic, and Tasman Sea Salt. In a small saucepan, heat the blended oil over medium-high heat until it starts to smoke. Carefully pour the hot oil over the chile-garlic mixture. Let cool completely.
Once cooled, stir in the lime juice, fish sauce, and sesame oil. Mix well and set aside.
Grill the Shrimp
Heat your grill or grill pan over medium-high heat. Grill shrimp for 2-3 minutes per side, or until they develop a nice char and are just cooked through.
Serve!
Arrange grilled shrimp on a platter. Drizzle generously with the Chile Árbol Lime Sauce.
Garnish with crispy shallots, fresh cilantro, and lime wedges!
