Ingredients
1.5lb Bag of Petite Gold Gourmet Potatoes

2tb Organic Grass-Fed Tallow
2 Cloves of Garlic
3 Sprigs of Thyme
Salt To Taste
Pepper To Taste
Directions
Wash your petite gold potatoes and allow them to dry. Once dry, place them into a small bowl and microwave them for 5 minutes.
Allow them to come back to room temperature. Place parchment paper and place the potatoes one by one onto the paper. Then add another sheet of parchment paper on top and smash down each potato to form a circular shape.
Heat up your cast iron pan on medium-high heat. Add tallow to the pan and then place the smashed potatoes into the pan with garlic, thyme, salt, and pepper.
Cook for 3-5 minutes on each side until the potatoes are a crispy, golden brown. Once they have finished cooking, place onto a serving plate and enjoy with your favorite protein!
