Ingredients
2 Fennel Bulbs, stem removed
1 Granny Smith Apple
1 Red Onion
Handful of Parsley

Tasman Sea Salt to Taste
Black Pepper to Taste
2tbls Champagne Vinaigrette
Directions
Wash your vegetables, make sure they are completely dry.
Grab a mandolin and thinly slice your fennel into a bowl. Cut an apple in half and use the mandolin to slice this as well. Finally, chop a red onion in half and thinly slice it with the mandolin into the bowl.
Grab fresh parsley, remove it from the stem, and add it directly into the bowl. No need to finely chop! Unless that is your preference.
Now, it’s time to season. Add in Tasman Sea Salt, cracked Black Pepper and a champagne vinaigrette. Toss it all together and set your salad aside to plate with your favorite protein.
