Celebrate Memorial Day with this all-American combo of flame-grilled bone-in New York strip steaks and a creamy, tangy potato salad made from scratch. Ideal for cookouts, backyard parties, or a laid-back family feast.

Ingredients

2 Black Opal Bone-In New York Strip Steaks
- 2 tbsp olive oil
- 2 cloves garlic, smashed
- 1 tbsp fresh rosemary or thyme (or 1 tsp dried)
Tasman Sea Salt & freshly ground black pepper
Optional: 1 tbsp unsalted butter (for basting)
- 2 lbs Yukon Gold or red potatoes, cut into 1” chunks
- ½ cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 3 stalks celery, diced
- ½ small red onion, finely diced
- 3 hard-boiled eggs, chopped
- 2 tbsp chopped fresh parsley or dill
- Salt & pepper to taste
Optional: 1 tbsp sweet relish or chopped pickles

Directions
Start the Potato Salad
- Place potatoes in a large pot, cover with cold water, and add a generous pinch of salt.
Bring to a boil, reduce heat, and simmer for 10–12 minutes, or until fork-tender. Drain and let cool slightly.
In a large mixing bowl, whisk together mayo, mustard, apple cider vinegar, salt, pepper, and relish if using.
- Add warm (not hot) potatoes to the bowl, along with celery, red onion, eggs, and fresh herbs.
- Gently fold everything together. Taste and adjust seasoning.
- Cover and refrigerate for at least 1 hour (you can prep this the day before!).
Prep the Steaks While Potatoes Cool
Pat steaks dry. Rub with olive oil, garlic, herbs, salt, and pepper. Let them rest at room temp for 30–45 minutes (this helps them cook evenly).
Grill the Steaks
Heat grill to high (450–500°F). Clean and oil the grates.
- Sear steaks for about 4–5 minutes per side for medium-rare, or until internal temp reaches 130–135°F.
If desired, baste with butter during the last minute on each side.
- Let steaks rest on a cutting board for 5–10 minutes before slicing or serving.
To Serve
Plate the steak next to a generous scoop of chilled potato salad. Garnish with fresh parsley or dill.
