Ingredients
1 lb Campo Grande Ibérico Secreto
2 tablespoons soy sauce
2 tablespoons fish sauce
3 tablespoons brown sugar
2 tablespoons lemongrass
1 teaspoon minced garlic
2 teaspoons sesame oil
1 tablespoon vegetable oil
salt and pepper to taste
1 French Baguette
1/4 cup yuzu mayo
1/4 cup cilantro leaves
1/2 cup thinly sliced cucumber
1/2 cup pickled carrots
1/4 cup jalapeños

Directions
Pork Marinade
Place the soy sauce, fish sauce, brown sugar, lemongrass, garlic, sesame oil and vegetable oil in a large bowl.
Whisk to combine. Add the pork and toss to coat.
Cover and refrigerate for at least 30 minutes or up to 1 day.
Building The Sandwich
Heat a pan on medium high heat. Add the marinated pork in a single layer to the pan. Cook for 3 minutes on each side or until cooked through.
Repeat the process with any remaining pork.
Spread the yuzu mayo evenly over the pieces of bread and then divide the pork between the sandwiches.
Top the pork with pickled carrots, cucumber, cilantro leaves, and jalapeños.
Cut sandwich into small bites (if you are using as an appetizer) and serve!
