Ingredients

3 Herd & Grace Cheddarwurst Sausages with Jalapeño
3 quality hot dog buns (toasted if desired)
1 cup baby cherry tomatoes
1 small red onion, finely diced
1 small red onion, finely diced
2 tbsp fresh cilantro, chopped
Spicy mayo (store-bought or see below)
Freshly cracked black pepper (optional)

4 slices thick-cut Campo Grande bacon
½ cup mayo
1 tbsp Sriracha (or more to taste)
1 tsp lime juice

Directions
Make the Bacon Bits:
Chop bacon into small pieces.
Cook in a skillet over medium heat until crispy, about 7–10 minutes.
Remove with a slotted spoon and place on a paper towel-lined plate to drain.
Optionally, season with cracked black pepper while still warm.
Prepare The Toppings:
Wash the cherry tomatoes and dice red onion.
Toss together in a small bowl with a pinch of salt and a bit of chopped cilantro.
If making spicy mayo from scratch, whisk mayo, sriracha, and lime juice in a small bowl.
Cook the Sausages
Grill or pan-sear the Cheddarwurst sausages over medium heat until heated through and nicely browned (about 5–7 minutes).
Assemble the Hot Dogs
Place each sausage into a toasted bun.
Spoon the tomato-onion-cilantro mix over the top.
Drizzle generously with spicy mayo.
Sprinkle with fresh bacon bits.
Garnish with extra cilantro if desired.
