Ingredients

Cape Grim 100% Grass-Fed Brochettes
Two Handfuls Red Leaf Lettuce
1 Avocado
2 ½ Cups Cubed Butternut Squash
1 Cup Cherry Tomatoes
½ Red Onion
4 Tbls Apple Cider Vinaigrette Dressing

2 Tbls Grass-Fed Tallow
Directions
Wash your Red Leaf Lettuce, spin dry, chop, and set aside.
Take your defrosted brochettes, season with Tasman Sea Salt and Pepper. Sear until they reach your desired temperature and set aside.
Preheat your oven to 350°F. Place your butternut squash onto a pan, season with Tasman Sea Salt and Pepper, roast for 20 minutes.
While the butternut squash is roasting, slice the cherry tomatoes in half, slice the red onion, and cut the avocado into large chunks. Season to taste and set aside.
In a shallow pan, melt the tallow and incorporate the vinaigrette to create a delicious dressing.
Add the lettuce to a bowl along with the dressing, toss, and plate.
Top with your brochettes, butternut squash, cherry tomatoes, red onion and avocado to complete the power bowl. Enjoy!
