Wet Aging vs Dry Aging: Explained

So how is beef aged? Wet aging and dry aging are two common methods used to enhance the flavor and tenderness of meat. Both processes involve allowing meat to rest under controlled conditions, but they differ in both their approach and resulting characteristics.
Our Decision:
Through our extensive testing we've discovered we're simply able to get more flavorful, tender, and consistent cuts when wet aging compared to dry - which we found less consistent and led to a greater degree of waste.

Wet Aging
The Process:
- Vacuum Sealing: Wet aging involves sealing the beef in vacuum-sealed bags immediately upon processing.
- Refrigeration: The sealed meat is then refrigerated at controlled temperatures for an extended time period, typically ranging from a few days to several weeks.
- Moisture Retention: During this time, the beef ages in its own juices, hence the term "wet" aging. This method marries the meat with its natural juices, aiding in moisture retention.

- Consistency: Since the meat is vacuum-sealed, there's minimal exposure to air, leading to a more consistent aging process.
- Exceptional & Trustworthy Flavor: Wet aging results in less variability in the flavor profile compared to dry aging, as the meat is not exposed to the same extent of enzymatic breakdown and dehydration.
- Sustainability & Efficiency: Unlike with dry aging, no amount of the premium beef is wasted and needs to be cut away

Dry Aging
The Process:
- Air Exposure: Dry aging involves hanging the beef in a controlled environment, typically a refrigerated room, with proper air circulation.
- Temperature and Humidity Control: The room's temperature and humidity levels are monitored and maintained throughout the aging process.
- Evaporation: Over time, the meat undergoes natural enzymatic breakdown and moisture loss due to evaporation, resulting in a concentration of flavors and intensification of taste.
Features:
- Intense Flavor: Dry aging imparts a distinct and intense flavor profile to the beef, characterized by nutty, earthy, and sometimes even funky notes.
- Unique Texture: The extended aging process leads to a firmer texture with a depth of flavor, appreciated by discerning palates.
- External Crust: Dry aging forms an outer crust or pellicle on the surface of the meat, which needs to be trimmed away before cooking to reveal the beautifully aged interior.

We trace the origin of every single cut back to the idyllic pastures it came from - surpassing the Australian MSA grading system, which is the most stringent and demanding in existence.
2. You Choose
Choose from expertly curated boxes, premium individual cuts, or create your own customized box. Your satisfaction is guaranteed!
3. We Deliver
We send shipments on Monday, Tuesday, and Wednesday. Any orders after Wednesday at 12PM will ship the following Monday. Products are available for in-store pick up 7 days a week.
Products are shipped frozen with insulation, environmentally friendly cold-packs that keep the products safe and delicious while in transit for up to 72 hours.
