Why This Wagyu Is Different
Raised Here in The USA.
Most Full-Blood Wagyu is imported.
Bella Cattle is intentionally different:
- Raised in Hartsville, Tennessee
- Full-Blood Japanese Black Tajima genetics
- Versatile cooking experience with a wide variety of cuts.
This is Wagyu with a sense of place and a purpose.
400+ Days for Flavor
Each Bella Cattle animal is grain-fed for over 400 days using a traditional Japanese-style feeding program — longer than any comparable American program.
The result is intramuscular fat that distributes differently, a fat texture that renders at a lower temperature, and a depth of flavor that shorter programs cannot replicate regardless of genetics.
- Exceptional marbling distribution
- Fat that renders before the pan gets loud
- Flavor depth that holds through the finish
- Texture that changes how the cut behaves on heat
Cuts To Get Excited About
Why Herd & Grace Chose Bella Cattle
Herd & Grace is built around a single premise: access to cuts and sourcing relationships previously available only to high-end restaurants. Bella Cattle represents the American iteration of that promise. A closed-herd, single-farm, full-blood Black Tajima program — developed with Mayura Station genetics — that produces beef we have not seen replicated anywhere else on domestic soil.
Bella Cattle represents our commitment to quality, and expanding our offerings to bring you the best of the best.
