Altair
Altair is 100% grass-fed Wagyu from southern Australia. It pairs the fine marbling and melt-in-your-mouth texture of Wagyu with the clean, mineral flavor of grass-fed, pasture-raised beef.
Tajima Wagyu bloodlines are raised on pasture for about 30 months, far longer than typical beef programs, and never fed grain.
Altair is built on three pillars: genetics, grass and time. Tajima Wagyu bloodlines are combined with British and European dam lines, then raised in Tasmania, Gippsland and South Australia's Limestone Coast, regions chosen for year-round rainfall, volcanic soils and high-quality pasture.
Because the cattle grow slowly on grass alone, Altair's marbling is finer than grain-fed Wagyu, and it melts evenly as it cooks.
