Somebody still has to cook dinner on a Tuesday. We built this box from our own case for that kitchen: one that runs on a schedule, cooks most nights, and has no patience for food that tastes like an obligation.\u003c\/p\u003e\n\u003cp\u003eEvery piece of beef in the box is Cape Grim, from Tasmanian cattle raised and finished on grass alone. The two 10oz New York strips have the firm bite and mineral, grassy depth you only get from grass-finished beef. Get a cast iron pan properly hot, give them a few minutes a side, and let them rest before you cut. The outside skirt is the cut butchers used to keep for themselves. Loose grain, big beef flavor, and it cooks in about the time it takes to warm tortillas. Slice it against the grain. The filet mignon brochettes are a full pound of tenderloin, already cut into cubes: skewer them for the grill or sear them in a hot pan, and dinner is ready in minutes. Two pounds of ground beef cover the rest of the week.\u003c\/p\u003e\n\u003cp\u003eJidori is the chicken you’ve probably eaten at a good LA restaurant without seeing the name on the menu, and the two packs of breasts have the kind of flavor that makes grocery-store chicken hard to go back to. Chefs call Ora King the Wagyu of the sea. Two center-cut portions will show you why: silky fat running through deep orange flesh, rich enough that salt and a hot pan are all it needs.\u003c\/p\u003e\n\u003cp\u003eYour coach will have opinions about portions.
